This is a simple and tasty fish dish,
and can be made with low-fat sour cream and
mayonnaise if you wish. Serve it with the same
wine that you use in the cooking. We recommend
eating this dish accompanied by a Chardonnay or
Sauvignon Blanc.
Ingredients:
- 1 1/2 lbs. skinned mahi mahi fillets (or
any firm
white fish, such as halibut)
- 1/2 cup dry white wine, such as Sauvignon
Blanc
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 green onions, chopped
- 2 teaspoons grated Parmesan cheese
Preparation:
Rinse fish and pat dry. Cut into four serving
pieces. Place fish in a non-reactive baking dish
and add wine. Cover and marinate for 30 minutes
in the refrigerator, turning once. Combine sour
cream, mayonnaise and green onion.
Drain most of the wine from fish, leaving
enough to cover the bottom of the pan. Spread
onion mixture over fish. Cover and bake in 450
degree oven for 10 minutes per each one inch
thickness of the fish.
Halfway through cooking time, remove cover
and sprinkle with Parmesan cheese. Garnish with
lemon and parsley if desired, and serve with the
wine that you used in the cooking.
