The El Dorado County wine area used to
be a prominent pear-growing area. But years ago,
the region suffered a pear disease and many of
the orchards were planted with apple trees. Thus
the famous "Apple Hill" of today. This area
which also contains vineyards and wineries is
located near Placerville and Camino. This dish
is a long-standing favorite, often prepared by
my mother. Jerry Notestine of Nine Gables Winery
included the fruit filling on a recent
Sacramento TV show.
Ingredients:
- 2 cans of pears (or fresh if available)
- 2 cups of Barbera or other full-bodied red
wine
- 1/2 cup sugar
- 1 cinnamon stick
- 1 tablespoon vanilla extract
- 1 sprig rosemary
- 1 orange, juiced and zested
- 1 lemon juiced
- 1 can of raspberry or other berry
filling
Directions:
Drain pears and set aside. Mix all ingredients
together except raspberry or other berry filling.
Place in a non- reactive sauce pan and bring to a
boil. Insert pears and add enough water to cover
pears. Poach pears 15 to 20 minutes. Remove pears,
set aside, and chill.
Add berry filling and continue to cook until
reduced to a glaze consistency. Remove from heat
and cool to room temperature. Spoon chilled pears
into bowl and spoon glaze over pears. Garnish with
mint sprigs if so desired.
