Tilapia is a delicate white fish that is
complemented by the strong flavors of olives and
tomatoes. Try Viognier or Sauvignon Blanc in the
dish and have the rest with your meal. This dish is
ready in less than 30 minutes.
Ingredients:
- 1 tbsp. extra virgin olive oil
- 1/2 medium onion, peeled and diced
- 1 cup diced tomatoes, fresh or drained
canned tomatoes
- 1/2 cup sliced ripe olives
- 1/2 cup chicken broth
- 1/4 cup dry white wine
- 1 tsp. dried oregano or marjoram (or 1 tbsp.
fresh)
- 1/2 tsp. garlic powder
- Salt and freshly ground pepper
- 1 lb. tilapia, or any other firm white
fish
Preparation:
Cook onion in oil in a medium skillet for about
10 minutes, or until soft. Add tomatoes, olives,
broth, wine and seasonings and cook for 5 minutes
more. Place fish in the skillet6, covering it with
some of the sauce. Cook, covered, until fish flakes
easily with a fork, about 5 minutes. Serve over
rice or with crusty bread to soak up the delicious
sauce.
