What a great way to add wine to your salads! This is a delicious cool, creamy dressing that is a lovely delicate pink color with a delicious flavor. We have raised vegetable beds in our back yard and love making summer salads out of the garden -- particularly using this dressing.
We really like a spicy Zinfandel in this recipe but any robust red wine will do, including Syrah, Tempranillo and Barbera. Pinot Noir gives the dressing a slightly milder flavor
Try it on any mixed green salad, or even on sliced tomatoes.
Recipe: Zinfandel Salad Dressing |
Ingredients:
1/3 cup sliced green onions
¼ cup Zinfandel wine
3 tbsp. red wine vinegar
2 garlic cloves
½ tsp. salt
½ tsp. freshly ground black pepper
¾ cup mayonnaise
Instructions:
Combine all ingredients except mayonnaise in blender; blend until onions and garlic are minced. Add mayonnaise and blend until smooth. Refrigerate until cold. Whisk dressing before serving. Makes about 1 ¼ cups.
